Priprema čokoladnog fila: U manju šerpu sipati 12 žumanca, 250 g šećera, 50 g prosejanog kakaa i 40 g puding-praha od čokolade, pa uliti malo mleka od prethodno odmerenih 400 ml (70-100 ml) i dobro sve izmešati žicom za mućenje, da ne bude grudvica. Sipati ostatak mleka, staviti na ringlu, zagrevati i kuvati uz stalno mešanje žicom dok ne počne zgušnjavanje, onda sniziti temperaturu na trećinu i kuvati još minut-dva. Sve vreme mora da se meša.\nU vrelu smesu dodati izlomljenu čokoladu i puter sobne temperature. Promešati malo, ostaviti par minuta da se čokolada otopi, pa još jednom izmešati da se sve lepo sjedini i ujednači. Kad se fil malo prohladi prebaciti ga u frižider na dva-tri sata. Nakon toga promutiti mikserom, fil će tom prilikom posvetleti i dobiti na zapremini. Izmeriti fil, odvojiti 150 g za premazivanje torte spolja i za dekoraciju, ostatak podeliti na tri dela (četvrta kora se ne filuje). Trebalo bi da fila bude oko 1200 g ukupno, pa kad oduzmemo onih 150 g, ostaje 1050 g i to delimo sa tri, dakle oko 350 g po kori." . _:nd3f9870ff1c04df1a487b56d281ec691xb0 "3. Priprema fila od malina: 400 g malina, 130 g šećera i 100 ml vode kuvati do vrenja, pa još par minuta i izmaći sa ringle. Kuvane maline možete propasirati da bi se oslobodili semenčica, a i ne morate, ako vam ne smeta (ja nisam). U jednom lončetu razmutiti 40 g puding-praha od maline sa 100 ml vode, u drugom razmutiti 5 g (pola kesice) želatina takođe sa 100 ml vode. Ostaviti sa strane nekoliko minuta da želatin nabubri, pa ga zagrejati na tihoj vatri da se otopi i postane tečan. U skuvane maline sipati razmućen puding prah (promešati pre sipanja, skrob se sleže na dnu) i rastopljen želatin, vratiti na kuvanje uz stalno mešanje, da se zgusne. Fil u ovoj fazi neće biti jako gust, što je OK, zgusnuće ga želatin dodatno tokom hlađenja. Ostaviti da se delimično prohladi - u vreme filovanja treba da bude mlak jer se lakše razmazuje, ali ne sme biti vreo jer bi topio čokoladni fil pod sobom.\nIzmeriti fil, podeliti na tri dela. Nafilovati na isti način drugu koru i treću koru, pa poklopiti četvrtom, sa koje ne treba skidati papir. Poklopiti tortu naopako okrenutom tacnom, pa sve zajedno prevrnuti za 180°, skinuti kalup i odlepiti papir sa vrha. Tortu premazati ranije odvojenim čokoladnim filom (oko 100 g) u sasvim tankom sloju sa svih strana. Svrha ovoga je popunjavanje rupa i neravnina pre nanošenja glazure. Dekoracija: Kad se glazura malo stegla, posuti tortu kakaom kroz gustu cediljku (jedna kašičica), da postane baršunasta.
